PORK CURRY (Cari de Porc)

This is a delicious Creole recipe, very easy to prepare at home for family or friends.

And when you will visit Mahé in the Seychelles, do not miss to climb up to the Jardin du Roi spice garden and taste the original version of the Pork Curry (see further right).

Ingredients

To start

To serve 4 persons:
  • 1 lb.of lean pork meat cut in small squares.
  • 1 chopped onion.
  • 2 teaspoons of ground fresh ginger.
  • 2 cloves of crushed garlic .
  • 5 leaves of curry.
  • 1 big potato cut in small cubes.
  • 1 tablespoon of curry powder mild or hot according to taste.
  • 1 tablespoon of safron powder.
  • 2 tablespoons of vegetable cooking oil.
  • 1 teaspoon salt and half teaspoon of pepper.
  • Half a pint of boiling water.

Method

1. In a saucepan: heat up the oil and brown the bits of the chopped onion.

2. Add the curry powder and the safron powder.

3. Mix all together.
Be carefull: on medium heat!
The powders must not burn, because the taste of the powders will be altered.

4. Add the squares
of meat seasoned
with salt and pepper.

5. Brown the squares of meat in the sauce.

6. Add one quarter pint
of boiling
water.

7. Boil down.

8. Add one more quarter pint of boiling water.

9. Cover 15 minutes, until the
mixture is simmering.

10. Reduce heat.
Add garlic and ginger.

11. Add some curry leaves.

12. Mix again.

13. Add your
potatoes cubes.

14. Mix well.

15. Cover for 15 to 20 minutes until the sauce has thickened, and until the meat and the potatoes are cooked.

16. Add salt...

17. and pepper,

And Serve!!!

And SERVE...

Hint

A pleasent addition to the pork curry is a handfull of green peas, together with potatoes, a few minute before removing from the cooker. And serve this with riz (like the presentation above). Delicious!

Situated in the South of Mahé, a short 10 minutes drive from the airport and 20 minutes drive from Victoria. Le Jardin du Roi is an 85 acre spice plantation on a nature reserve with a large variety of plants and wildlife.

The plantation is situated in a high valley framed by surrounding hills covered by a virgin rain forest. A cool tropical environment featuring a number of endemic and exotic plants.

Le Jardin du Roi offers visitors a memorable taste of its history and a chance to view its spices. It is a unique opportunity to sample food preparations with fresh plantation grown spices and fruit as well as a cool and tranquil setting for a fun day out.

A small but unique restaurant offers savoury and sweet crepes, house specialities like saffron fish, fish in banana leaf, curries, as well as a local "plat du jour", fresh fruit salads, punches, herbal teas, etc. Home of exotic fresh fruit drinks.

Open 7 days a week, from 10 am to 5.30 pm.

Visitors are able to roam at leisure in the gardens amongst a wide variety of spice plants. Mountain trails to the summit of the garden are also available for your hiking pleasure.

In the old planter's house (built 1860) you will find a small museum.

Accommodation in plantation style chalets should be available in the foresable future.
